Below are descriptions of the different ordering options with prices.
Spring 2013 Options
We are offering three grass-fed beef purchasing options:
- Lateral Quarter—Steak Lover's Option (85-100 lbs): Includes a wide variety of cuts with more steaks than roasts. Specific cuts are listed below.
- Lateral Quarter—Roast Lover's Option (85-100 lbs): Includes a wide variety of cuts with more roasts than steaks. Specific cuts are listed below.
- Breakfast Sausages: You may order any number of 1-lb packs with four links per pack.
Steak Lover's Quarter ($7.35/lb)
This option includes more steaks and fewer roasts. We prefer to get the bone-in steaks (sirloin, t-bone, and porterhouse) because chefs all agree that that these bone-in steaks have more flavor than their (more famous) counterparts—the filet mignon, boneless sirloin, and N.Y. strip steak. As there are only two of some cuts per steer (such as flank steaks and skirt steaks), this option will include a mix from the following items:
